If it is OK to alter the emissivity of the wafer for your purposes,
paint it with manifold paint, bake it out, and use an IR camera to
determine temperatures (this doesn't work real well with product
wafers, but it's fine if you are looking for things like temperature
uniformity).  I have realtime video of a wafer undergoing (destructive)
thermal shock by this means.
