Nick,

Etching stainless steel (foil form) with Ferric Chloride is quite easy.
Solution with 20 -30 % FeCl3 at room temperature have to be sprayed
(not immersed  with) on the sample.
As a mask for a larger holes ( 0.1 - 1 mm) you can use photosensitive
foil for a printed board (3M)
